I think it's already explained? or not or maybe from another series, idk I've read so much cooking series. But from what I know pork is for the lowly class since pig is seen unsanitary or unclean. As for why mc serve him pork is maybe because pork belly is actually originated from china and from the look of it, mc seemed to have cooked braised pork belly which is pretty famous in China, but idk about ancient times maybe haven't been introduced yet.
