Must I remind you of how he foiled the blindfold girl's attempt at probing into him, twice, once by flicking a coin so hard it shattered the glass of water she was holding? Or that he straight up murdered a guy from the same continent as his, even from the same warband, who's supposedly his longest friend because he was being a threat to the witch girl?
As for the "interrogation" fight, even if we assumed the guy he used as a club to be of teen age, he's still an adventurer so some muscles are to be expected on top of all the equipment he was wearing, so that's ~65 + 10 = ~75kg Zig was swinging around without breaking a sweat. And again, just because he can't use magic doesn't mean he'd be a bad match against it. For one thing my man can literally "smell" magic and predict exactly when a spell is going to go off, that's how he was able to win against the witch girl in the first place. She lacks combat experience but as evident with the stampede her magic dwarfed everyone else in term of both scale and power.
Yet in spite of all that, your mind still arrived at the assumption that "he's supposed to be the underdog" when the manga has never made any attempt to portray him as such?
There's an overarching story, but as far as a super important endgame goal they have none. There's no demon king to be defeated, no world-ending threat where you need to gather all the heroes in one place to resolve it, no great treasure to be found, etc etc. Basically there's no greater good for the characters to work toward to beside their own agenda, it's literally just what is happening in their daily life.
Also that is just a figure of speech. Majority of the time it's not up to the author whether a manga continues or gets wrapped up, even though it's their own creation. Just look at how Bleach ended.
2. It's funny you're complaining about lack of progress and the drawn-out length on this manga of all things, considering each chapter is half the number of pages compared to other series of the same type (slice-of-life with action theme).

Because Akechi wasn't told about Nobunaga's intention of shifting "war" from the battlefield to the table for diplomacy, what with Nobunaga being a cryptic with his words as always, he thought Nobunaga meant it literally when he wanted to wage war against the Ming and that's what really got him shaken in his boots, leading us to this current situation.
Akechi's fear was that should Nobunaga's campaign on the Ming failed, which it very much will (in actual history, Akechi inherited Nobunaga's dream of conquering Ming after the latter's death, but his force didn't even make it through Korea) then history will only remember him as a tyrant blinded by greed, thus his honor forever smeared, that's why he decided before that happens he will kill Nobunaga in order to retain his honor.
