On the other hand "anything can be a poison in a high enough dose" while kind of true, doesn't really hold up either because your body just can't intake enough of certain things to ever reach that threshold. Like you can argue sawdust is a poison in high enough doses, but in practice you only are harmed if you eat so much sawdust that you don't eat enough food or water and suffer from dehydration or starvation.

And water can be a poison technically, but only because if you flood your body with enough water it upsets your electrolyte balance and that can cause heart attacks. On the other hand if you have water with electrolytes added in theory you'd never run into that wall because you'd stop being able to disrupt your electrolyte balance. The next cause of death would be something like drinking so much water you deform your stomache or start filling your lungs and drowning, which isn't really poison in the typical sense, unless you count blunt force trauma or starvation as poisons, in which case yes everything is poison.

All medicine is literally just low doses of poison, honestly.
