While you’re correct about opportunistic behavior, you’ve stretched the definition too far. cows eat their placenta mainly as a survival instinct to hide the scent from predators, not for dietary preference, on the other end of the spectrum, a lion eats the stomach contents of a zebra fermented grass, yet no one considers them omnivores, i think the existence of mad cow disease is actually the strongest evidence for my point, cows entirely lack the proper equipment to process a carnivorous diet, even a small amount of meat can kill a cow because their systems have no defense against it. It’s like a toddler eating a dead snake or maybe a battery, sure they can eat it i guess, but it doesn't change the human diet, it just makes the toddler sick because they aren't meant to consume it.

You could say that, but many farmers simply let their cattle graze, offering maybe a bale of hay in the winter to stave off hunger. The cattle adapt to this naturally, so it is not selective evolution— although some, like Angus, are bred for meat, while others, like Longhorns, are pure survivors, shaped entirely by survival rather than selective breeding, and some are bred for milk such as jersey cattle are. Also, cow’s milk is essentially processed grass, so it feels a bit silly to claim they aren’t pure plant eaters just because they drink “processed grass juice” before they can handle unprocessed grass. unless of course you think smoothies are carnivorous ?
