In Liz's eyes, it's possible she thought the MC was the one doing the crime, which is why she felt the need to cast a binding spell in the first place rather than a protection spell on the guy
As for cancelling the spell, I absolutely agree that she should have done so since magic seems decently responsive in most cases

Kevlar is bullet proof, not knife proof. It's actually quite vulnerable to being cut/slashed
Bullets are effectively blunt weapons that just move fast enough to 'pierce' through stuff.

A reminder that Liz didn't know what was going on in that situation and just saw our MC attacking a guy. It was irrational to use it on just the MC, and reckless to do anything at all, but she was uninformed of the situation and acted impulsively (like a teenager)
And in America, we're supposed to have a discipline on firearm safety, but it still poses a danger to our society on a regular basis. Same with cars, and people still drive like reckless morons.

I'm also still upset over that incident, but I will say things are incredibly weird rn with the brainwashing (which might not be Liz's (intentional) doing)
And we do have to remember that they're still kids. And considering how most adults don't know what they're doing...
