You lack imagination. You could be facing someone to protect someone else, you could be waiting for backup, and/or you could look for/try to make a chance to flee. You also might not want to kill them, say if that will cause legal or revenge problems for you. (or a seed of darkness might take you over more, probably not that last one being all fictional though)

Imagine you are in a battle with armies on either side. It's a war with swords, no guns. You fight a enemy who you realize you will not be able to defeat or likely not be able to defeat. If you can stall them, you increase your sides chances of victory and your own chances of survival. If you carelessly charge at the enemy seeing no way to win you will be quickly killed and then that enemy can move on to attack and kill more people on your side. If you can aim for a "tie", just keep the enemy occupied, if your side is winning elsewhere someone may join in to battle this skilled opponent. At the very least this person is tied up battling you for while.

There are lots of reasons to fight to stop someone rather then to kill or incapacitate (and incapacitated is usually so much harder than killing) them, none of those reasons have anything to do with a competition.

Perfectly legitimate to aim for draws etc. a sword and wielding that sword is a means, not a end. In a real life situation you might indeed want to aim for a draw if you can't win.

That said, it's hard to learn that way.

I've seen a number of "Morierty is actually a hero/very good person playing a villain" type of stories. It is indeed a bit contrived, almost by necessity, to preserve the twist.
