I am going to spoiler in case my guess is correct. I think the slime-person MC met was the goddess moving fate along and getting the saintess in place. Thus I don't think slime-people are that common, or all that possible without divine intervention. But that's just a theory.

It is rare, but it is still plausible. But you have to keep in mind A: this is a plot point that got established and paid-off within the same chapter. It's not the greatest but it still works. And B: this is the same series that has the main characters go back in time. It is not really all too concerned with total realism.
