U aim to have multiple small patterns or 1 big pattern on your tiles, you draw 1 tile and discard 1 tile each turn. You can also use 1 of the discarded tile from other players to complete your pattern instead of drawing another tile. After you got desired pattern you aim to get "pattern closer" to declare. After someone finished their "pattern closer" they then declare it and other players that haven't finished will be forced to end the game after 1 more turn, after that the points are counted. Each pattern has their own score, the more difficult the patter is the more points you get. That's the gist of mahjong. There's some other rules like how you need to declare it when you only need 1 more tile to finish your "pattern closer", tiles type, and stuff. But you get the general idea.

The fun in Mahjong is you wanna complete your own patterns while also preventing opp on completing theirs. You can get the clues on what patterns are the opponents is trying to make based on what tiles they discarded. So since they can take tile in discarded pile, you kinda don't want to discard tile that your opp really wanted based on what they discarded. Sometimes a player will bait another player to make them think they're making "pattern A" while actually they were making "pattern B", or pressure other players to discard tiles that they wanted to finish the pattern.

I highly recommend you to try a web game called "Mahjong soul" if you want to learn more, it's an online mahjong simulator that teaches newbies to understand the rules and some common strategies on playing mahjong. You might struggle to start, but after 2-3 days you should already able to play mahjong comfortably
