I don't think K is insane, I believe he just realised that whatever he was seeking in life (a reason/meaning) just doesn't exist. When a person comes to a heavy realisation like that, he truly becomes free. He was seeking for something to keep him alive, something to keep him going, once he realised no such thing exists and that "a meaning to life/reason to live" is a man made concept he decides to risk his life. After all the quote goes "there is nothing more dangerous than a man with nothing to lose". Thank you.
