I've been reading too many of these for too long that I usually take the titles with a pinch of salt now so my expectations are fairly low.

A fair deduction...However I think it comes out of the fact that food is still a "necessity" for these people. By that I mean that they can't risk the level of experimentation we can because we have fresh food in abundance and even the modern equivalent of a low earning commoner has access to cold storage.(fridges, freezers and even good yet cheap salt)

Techniques would only develop to a certain point b4 assumptions take over and "Tradition" kicks in. And even if there were people who experimented they would be seen as strange or weird or even wasteful and their discoveries would be hard found and hard to spread (Unless of course you get lucky to share with a good person in power like MC here)
