All due respect here, but it's important to remember that Thorfinn's strength isn't due to his ability to kill, but his ability to hold strong to his ideals. Killing them all is easy... but for how long could he keep doing that, over and over? When would he sleep? When would he eat? How would he stay eternally young? In time, he would fall, and his ideals and his dreams would fall with him. It simply isn't the way.
Instead, he chose, not to run away scared, but to not kill without purpose. He simply chose to leave. That shows a different kind of strength, and it is not cowardice to say, "I could stay, and kill you, and keep killing you. You will never be strong enough to kill me without trickery and deceit. I choose, instead, to leave, of my own choice, because killing you is not worth it."
It is understandable, though. Japanese paid terrible price for following their ruthless leader during WW2.
Some might still cling to the hope that peace will forever last, that economic growth can benefit everybody so there is no need for war. Peace can only last as long as your enemies afraid to fight you, however.

As I said to someone else, I just don't think you get the point of his character. Let me ask a different question: what would killing them actually gain? Let's take for granted that he's long learned that revenge doesn't fix anything; Lord knows it didn't do him any good in his past. What's the point of killing them?
Killing these LNU who raided the nord settlement will stop this escalation. These LNU have the sword. This specific tribe/faction is way more aggressive and ruthless than the other LNUs that have been meeting with the nords so there's a big chance that they will use the sword as a rallying point for unification or conquest of other tribes, or even to look for more nords to steal swords from. It will be nonstop wars.
I'd lost track of this, but here's the thing. Killing the raiders is more likely to draw the attention and anger of other Lnu tribesfolk, rather than stop the escalation. Already there are groups who are convinced Thorfinn and his people are dangerous. Proving them right by killing them isn't going to help; it's all about perspective. Driving them off, rather than killing them, shows strength, and shows that no, you aren't dangerous, but rather are defending yourself. Unfortunately, though, it looks like their situation has already escalated to the point that it's more a question of if Thorfinn and his group can leave without the Lnu pursuing out of vengeance. That's the more significant long-term danger.

What's the point in killing them? How about stopping this raiding party from killing more of his people and burning down their homes? Is that a good enough reason or point for you?
Seeing how this raiding party has already murdered 1-2 dozen people at least in cold blood, broke their peace treaty with no formal declaration of war, and are openly celebrating the murders while planning to commit more, I would hope that this would be a good enough reason. Keep in mind, the raiders would have probably murdered Thorfinn's wife, kids, and friends had they not been spooked by Cordelia after they tortured her.
The situation is very different from Thorfinn's past and his current battle. In the past, he killed people that had nothing to do with his revenge solely so he could get revenge. Here, these are his supposed allies showing up in the middle of the night to murder all his friends and family mostly for loot and fun.
STOPPING them is a good thing, of course. KILLING them, however, is likely to only confirm the thing the Lnu fear most: that these people are a deadly danger. Ironically, Thorfinn's goal of making them leave them alone long-term is actually better handled by driving them off without killing them. This leaves him and his as the strong-but-safe people who defended themselves, and the group who attacked as foolish people who killed for greed and then were repelled when Thorfinn and his people clearly had great strength if they so chose.
It builds the narrative for Thorfinn that he is not, in fact, a threat to the Lnu. It looks like the story is going to involve them leaving. One thing Thorfinn does not want is pursuit. If they come for payback or believing Thorfinn and his folk are too dangerous to let settle somewhere else, Thorfinn will be quite well served in having taken no lives, leaving them as the aggressors in their own peoples' eyes.
